Potato Salad
    Potato Salad Ingredients
  • 4 large potatoes, boiled, cooled, peeled and diced
  • 1 small red onion, diced
  • 1/2 cup, Thai basil, roughly chopped
  • 2 pickles, diced
  • 1 red bell pepper, diced
  • Cashew Cream Mayo
  • 1 cup raw cashews
  • 2 tbsp garlic powder
  • 2 tbsp nutritional yeast
  • 1 cup water
  • 1/2 lemon, juiced
  • Garnish
  • 3 strawberies, chopped
  • 1/2 cup, arugula

  1. Blend Cashew Cream Mayo
    Add the cashews, garlic powder, nutritional yeast, and water to a blender and blend until smooth.
  2. Add mayo to potato salad ingredients
    Mix the mayo with the rest of the potato salad ingredients.
  3. Garnish
    Top each serving with the strawberry and arugula garnish.
