4 cups shredded zucchini, drained of water
1 cup chickpea flour
1.5 cups all purpose flour
3.5 tsp baking powder
½ cup nutritional yeast
½ tsp salt
2 tsp garlic powder
1 cap coconut milk
1 can corn
Half a bunch of cilantro (optional)
½ tsp turmeric
½ tsp black pepper
Mix all of the ingredients together. If the mixture is too thin, add a tbsp extra flour.
Spoon 2 tablespoons of the mixture into a waffle maker, close and cook for 5 minutes. Using a fork, gently pop the waffle out. This can be cooked oil free if the waffle maker is non-stick
