Smoky Red Pepper, Potato, and Red Bean Stew
    Roasted Red Bell Pepper Sauce
  • 1 jar roasted red bell peppers, with liquid (340ml)
  • 1 can dark red kidney beans, drained (398ml)
  • 1/2 tsp liquid smoke
  • 1 tsp fennel seeds
  • 1 tsp garlic powder
  • 1/2 tsp chilli powder (Optional)
  • 1 cup water
  • Potatoes
  • 6 medium potatoes, peeled and diced
  • 1 yellow onion, diced
  • 2 cup frozen peas
  • 2 cup vegetable broth
Instructions
  1. Blend Smoky Red Pepper Ingredients

    Add all of the smoky red pepper ingredients into a blender and blend until smooth.

  2. Combine with the rest of the ingredients

    Mix smoky red pepper paste with the rest of the ingredients, bring to a boil and simmer for 30 minutes until potatoes are soft.
