Ingredients
    Buckwheat Pancakes
  • 1 3/4 cups sweetened soy milk (or any kind of vegan milk)
  • 1 tbsp lemon juice
  • 1 cup buckwheat flour
  • 3/4 cup oat flour
  • 1 tbsp baking powder
  • 1/4 cup maple syrup
  • 3 tbsp ground flax seeds
  • Chocolate Peanut Sauce
  • 1/3 cup powdered peanut butter (you could use regular peanut butter for a more indulgent version)
  • 4 tbsp cacao
  • 1/4 cup maple syrup
  • 1/3 cup water
  • Toppings
  • 16 strawberries halved
  • 2 tbsp hemp seeds
Instructions
    Prepare buckwheat pancakes
  1. Buckwheat Pancake Batter

    Mix all of the dry ingredients in a bowl. Stir in the wet ingredients.

  2. Cook pancakes

    Using a ladle, scoop the pancake batter onto a hot non-stick pan and cook each pancake for 1 minute until brown.

  3. Prepare chocolate peanut sauce
  4. Mix chocolate peanut sauce ingredients

    Mix all of the chocolate peanut sauce ingredients adding water as needed to thin or thicken the mixture until desired consistency.

  5. Assembly
  6. Assemble pancakes

    Assemble pancakes and top with chocolate peanut sauce, strawberries, and hemp seeds.
